An early ripening variety, Dolcetto completes its fermentation in just 8 days and is generally ready to bottle within 6 months of harvest. Ascheri believes that Dolcetto should be drinkable in its youth and thus should display lots of primary fruit. For this reason, he employs no oak in the ageing process. The wine lacks no intensity however, and displays marvelous, violet-tinted color.
